Recipe # 2 - Soya bean and corn sundal

Soya bean with corn sundal is a healthy dish rich in protien , especially for vegetarians whose intake of protein is comparatively low.. A very colorful and tasty dish as well...


Ingredients
Soya beans - 1 cup
Sweet Corn kernels - 1 cup
Grated Coconut - 1/2 cup
Chopped onion - 1/2 cup
Salt - 1 tsp
Mustard Seeds - 1/2 tsp
Urad Dhal - 1/2 tsp
Dry Red Chilly - 2
Curry Leaves
Asafetida - a pinch
Oil - 1 tsp


Procedure:

Wash and clean the corn and soya beans .
Cook in water or pressure cook.
Decant the water and let stand for a few minutes.
Heat up the oil and fry the mustard seeds, urad dhal, onion,chilly and curry leaves.
Now add the cooked soya bean and corn.
Add the coconut and salt and remove from heat.
Stir to mix well, till the coconut and salt are evenly distributed..

is there an alternative to the coconut?
i am afraid of the high cholesterol in coconut.
a lot of Indian dishes has coconut in it and avoiding it would be avoiding a lot of really tasty food

These look like kidney beans (Rajma) not soya beans?? Or maybe I am wrong?

@ nadine [if she is seeing this] All nonvegetarians are vegetarians, if you get what I mean.

@Vasanthan not 'A lot of Indian Dishes" but lot of South Indian Dishes have coconut..others have less
